This super simple comfort dish comes together in a flash thanks to an Instant Pot and our Masala Paste!
Recipe (serves 4)
Ingredients:
• 1 tsp cumin seed
• 1/3 cup red onion, diced
• 1 ½ cup frozen mixed vegetables
• 1 cup basmati rice
• 1 ¾ cup water
• ½ jar Masala Paste
• Paneer, cubed (or tofu)
• 2 tsp salt
• ¼ tsp cayenne, optional
Method:
On sauté function, add a drizzle of vegetable oil, cumin seeds, and red onion.
Cook for 5 minutes.
Add in mixed vegetables, Masala Paste, water, salt & cayenne. Turn off sauté function and add paneer and rice.
Seal pot and switch to pressure mode. Take the time down to 3 minutes, let cook, then naturally release pressure.
