Ultimate Grilled Paneer Sandwich

This sandwich is flavorful and filling without the meat. Topped with tandoori inspired grilled peppers and onions make this sandwich a show stopper!


Recipe makes about 4 sandwiches


Ingredients

  • 16oz paneer cut into 4 thick slabs

  • 1/2 cup masala paste

  • 2tbs tomato paste

  • 1-2 tbs water to thin marinade

  • 1/2 red and green bell pepper sliced thin

  • 1/4 red onion sliced thin

  • Sandwich buns / rolls of choice (we used mini hoagie rolls)

  • Toppings: lettuce, spiced sweet onions (see below), harissa


Directions

  • Preheat oven to 400 degrees if using oven-safe grill pan. Please a greased grill pan in the oven while oven is preheating. You can also use a stovetop grill pan.

  • For the marinade: In a shallow dish, mix Masala Paste, tomato paste, water, and salt to taste. If you want it spicier, you can add some red chili powder.

  • Coat paneer slabs in the marinade mixture and let sit for 1-2 hours in the fridge.

  • Once marinaded, place paneer slabs on a heated grill pan. Save the marinade for the onion and pepper mixture. Grill the for about 10-15 minutes. Flip and cook for another 10-15 min.

  • While paneer is cooking, sauté onions and peppers in the saved marinade until cooked through and soft. Set aside.

  • For spiced sweet onion: Slice onions thin and long. Sprinkle with Green Chutney spice blend. Let sit for about 5-10 min to allow for flavors to mix!

  • Assembly: Butter and toast bread. Place one slab of paneer on the bottom bread. Top with some of the onion and pepper mixture, lettuce, and spiced onions. Spread harissa on top bread if using.
