The perfect one-pot comfort food dish filled with nutritious lentils, veggies, and rice!
Prep:
Soak yellow mung dal for 3 hours or more
Ingredients:
3/4 cup of washed and soaked yellow mung daal
4 green onions chopped with the whites and greens separated
1/2 zucchini chopped
3/4 cup basmati rice rinsed thoroughly
1 tbs oil
1tsp cumin seeds
2tsp Mirch Masala
3 cups water
Salt
Handful of chopped cilantro
Limes/lemons for serving
Method:
Heat oil in large pot and add cumin seeds, once seeds are sputtering, add the white part of the green onion. zucchini and Mirch Masala - cook and stir for about 2-3 minutes
Stir in daal, rice, and water, add salt to taste
Bring to a boil and then reduce to low temp. Cover with a lid on a tilt, leaving a small vent for the steam
Cook for about 15-20 minutes until done, turn off the heat, and close lid completely allowing steam to finish cooking the dish
Before serving mix in the remaining green onions, cilantro, and a squirt of lime or lemon juice
Serve with yogurt or raita
