Recipe created by Katie Petrich
Ingredients:
1 cup flour
3 tbs sugar
10 tbs unsalted butter, cold and cut into pieces
2 eggs, 1 which is beaten
4 pears peeled, cored and sliced
2 tbs brown sugar
Powdered sugar
Chai Masala
Method:
Mix flour, sugar and butter in a bowl and beat on medium with a paddle until it resembles coarse crumbles
Add 1 egg and beat on medium just until the dough comes together, if it is too dry, add a little cold water. If it is too wet, add a little more flour
Bring the dough together into a ball with your hands, cover in plastic wrap and chill in fridge for about 30 minutes
Preheat over to 350 degrees and line a large baking sheet with parchment paper
Place sliced pears, brown sugar, Chai Masala and 1 T flour into a large bowl and toss to coat
Remove dough from the fridge and discard plastic wrap
On a floured surface, roll dough into a 14 inch circle (about 1/4 inch thick)
Transfer dough to prepared baking sheet
Arrange pear slices in a circle in the center of the dough, leaving about 3 inches of a border
Fold the outside border of the dough up and around the pears to form a rough edge crust and brush with beaten egg
Bake for 40-45 minutes until the crust is golden brown and the pears are soft
Allow to cool and generously dust with powdered sugar
