Cheers to a refreshing treat!
Recipe and photos by Kathryn Petrich
Method:
Makes 2 drinks
Place in a blender -
1 cup ice
1 1/2 cups frozen pineapple chunks
1 cup Cream of Coconut - It is found in cans with other cocktail mixers at the grocery or liquor store. This is a sweetened product made for cocktails and is different from coconut milk.
Juice from 1 lime
1/2 teaspoon Milk Masala
4 ounces rum of your choice - I make this with 2 ounces white rum and 2 ounces dark rum
Blend on high until smooth - approximately 2 minutes. Remove blender pitcher from base and place in freezer for 15 minutes to allow flavors to meld, take out and blend again. Pour into two glasses with garnish of you choice (lime wedge, cherry, pineapple slice, paper umbrella).
Cheers to a refreshing summer treat!
