Chipotle Fire Turkey Meatloaf

The ultimate comfort food, this spicy turkey meatloaf hits all the right notes. Serve with some sweet potato mash to compliment the bold flavors.

Thank you resident Chef Katie Petrich for the recipe.

Chipotle Fire Turkey Meatloaf

2 pounds Ground Turkey

1/2 large Yellow Onion, diced

2 teaspoons Garlic Powder

1 teaspoon Salt

1 teaspoon Black Pepper

2 teaspoons Smoked Paprika

3 tablespoons Chipotle Fire Paste

2 Eggs

1 cup Bread Crumbs

For Gravy -

2 cups Turkey or Chicken Stock

1 tablespoon Chipotle Fire Paste

1 tablespoons Cornstarch mixed in 4 tablespoons Water

Preheat oven to 350F. Line a baking sheet with foil and lightly grease.

Add all meatloaf ingredients into a large mixing bowl.

Using your hands, mix until completely incorporated.

Place the meat mixture onto the baking sheets and shape into a loaf. Bake for 45-50 minutes until cooked through. Let sit for 15 minutes before cutting.

While the meatloaf is baking, make the gravy.

In a saucepan, mix stock and Chipotle Fire and bring to a medium boil. Whisk in cornstarch mixture until it begins to thicken. Let simmer for a few minutes.

Serve with your favorite sides and enjoy the fire!

I served it with buttery mashed sweet potatoes and a salad. They were a cool contrast to the heat.
